This Södermalm spot strips the pizza experience down to its most functional elements: a counter, a glass display case, and massive 50-centimeter pies. While the original 800 Grader in Vasastan operates as a sit-down restaurant, this Kocksgatan offshoot is strictly a slice shop, modeled on the New York tradition of quick turnover and reheating to order. The space is tight – essentially a narrow room with the kitchen on one side and a ledge with stools on the other.
You order at the register, choosing from pies that have already been baked and are waiting behind the glass. The kitchen tosses slices back into the oven for a quick blast, ensuring the thin crust comes out stiff enough to hold its own weight. Toppings rotate but often include a white Bianca with mushrooms, a spicy salsiccia, or a signature duck confit with arugula.
Seating is limited to the window stools or a few tables on the sidewalk under the awning, so the rhythm here is fast. It is common to see people eating quickly while standing or waiting for a whole pie – which is large enough to feed three – to take away.
